City Market eats: Master roaster hopes hungry Kansas Citians will flock to Murmuration

A new eatery and cocktail bar that now shares a space with the popular City Market Coffee Roasters is designed to reflect a vision of bringing people together, fostering connection, and embracing the diversity that makes the City Market so special, said master roaster Nikole Ammer.
Plus, the people are hungry — from day to night, she added.
“We saw a need for more breakfast, lunch, and cocktail options in the neighborhood, and we’re creating a place where people can enjoy great food and drinks while feeling truly part of the community,” said Ammer, owner of City Market Coffee Roasters and the new sister concept Murmuration Eatery.
Located at 307 Main St. in City Market, Murmuration adjoins the coffee shop and began a quiet soft opening with limited hours March 27. A grand opening is set for April 16.
Murmuration features a diverse menu of breakfast, lunch, and shareable dishes, offering something for everyone, Ammer said — from classic morning favorites like soft scrambled egg sandwiches, biscuits and gravy, and mini waffles to hearty lunch options such as grilled chicken sandwiches, Reubens, and vegan-friendly salads.

Fans of City Market Coffee Roasters will also enjoy a full cocktail menu and a thoughtfully curated selection of mocktails, she added.
“Our vision is to make City Market a true evening destination while continuing to serve the daytime needs of our community,” Ammer said.

Guests will enjoy a seamless experience between Murmuration and City Market Coffee, she noted, with a unified ordering system and the freedom to sit anywhere within the shared space. A text notification system allows customers to explore the market while their order is being prepared.
On weekends, Murmuration will focus on grab-and-go options to complement the bustling market atmosphere. In the evenings, the space transforms into a lively yet laid-back cocktail destination.
The restaurant’s name, Murmuration, is inspired by the mesmerizing movement of birds in flight — symbolizing unity, intuition, and the power of community, Ammer explained.
She personally completed the interior finish work. The result is a warm and inviting space that features a rich copper ceiling, intricate tilework, and patina accents throughout. A hand-painted mural, created by local artist Emily Alvarez, wraps the room from floor to ceiling.
The eatery will be open 6:30 a.m. to 8 p.m. seven days a week.
