Big food hall concept Parlor KC plans fall opening in Crossroads

Parlor KC, a collaborative food hall now under construction in the Crossroads Arts District, hopes to serve as a laboratory and incubation hub for area chefs and restaurateurs.
Eyeing a fall opening in the east Crossroads, Parlor will offer chefs and restaurateurs a physical space to test dishes and concepts on diners that want variety and new experiences, said founder Davis Engle.
Located in the two-story, 18,000-square foot building at 1707 Locust, Parlor hopes to offer a comfortable place for people to relax and socialize while enjoying drinks and food. Each floor will feature a bar and several different restaurants for up to 140 patrons. Kansas City-based Hufft Projects is leading design and construction on the building.
For a $10,000 to $15,000 up-front investment, Parlor’s partners within the food hall concept can offer their menu to customers, cutting down substantially on typical startup costs for restaurants. The company — which is in part owned by Atlanta-based Meriwether Companies and Redwether — plans to take the concept to other communities in the Midwest.
Food halls are popular in many urban hubs, including New York City, Chicago, Denver, San Francisco and others. As with the case at Parlor, food halls often feature outdoor and communal seating options in a casual, open environment.
